Catfish Recipe

Southern Fried Catfish

Ingredients:

  • – 4 catfish fillets
  • – 1 cup buttermilk
  • – 1 cup cornmeal
  • – 1/2 cup all-purpose flour
  • – 1 teaspoon paprika
  • – 1 teaspoon garlic powder
  • – 1 teaspoon onion powder
  • – 1/2 teaspoon cayenne pepper (optional, for a bit of heat)
  • – Salt and pepper to taste
  • – Vegetable oil (for frying)
  • – Lemon wedges (for serving)
  • – Fresh parsley, chopped (for garnish)

Instructions:

  1. **Marinate the Catfish**:
  • – Rinse the catfish fillets under cold water and pat dry with paper towels.
  • – Place the fillets in a shallow dish and pour the buttermilk over them, ensuring they are fully submerged. Let them soak for at least 30 minutes, or up to 2 hours, in the refrigerator.
  1. **Prepare the Breading**:

   – In a large shallow bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.

  1. **Heat the Oil**:

   – In a large cast-iron skillet or heavy-bottomed pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small pinch of the cornmeal mixture into it; if it sizzles immediately, the oil is ready.

  1. **Bread the Catfish**:
  • – Remove the catfish fillets from the buttermilk, allowing any excess to drip off.
  • – Dredge each fillet in the cornmeal mixture, pressing gently to ensure an even coating on both sides.
  1. **Fry the Catfish**:
  • – Carefully place the breaded fillets in the hot oil, cooking in batches if necessary to avoid overcrowding the pan.
  • – Fry for about 3-4 minutes per side, or until the fillets are golden brown and crispy. The fish should flake easily with a fork.
  1. **Drain and Serve**:
  • – Remove the fried catfish fillets from the oil and place them on a paper towel-lined plate to drain any excess oil.
  • – Serve hot, garnished with lemon wedges and chopped fresh parsley.

Serving Suggestions:

  • – **Coleslaw**: A classic side dish for fried catfish.
  • – **Hush Puppies**: Another Southern favorite, these are fried cornmeal balls that pair perfectly with catfish.
  • – **French Fries or Potato Wedges**: For a complete meal.

This Southern Fried Catfish recipe is crispy, flavorful, and perfect for a comforting meal. The buttermilk soak ensures the fish is tender, while the seasoned cornmeal coating provides a satisfying crunch. Enjoy!
