Lemon Garlic Chilean Sea Bass
Ingredients:
- – 4 Chilean sea bass fillets (6-8 ounces each)
- – Salt and pepper, to taste
- – 2 tablespoons olive oil
- – 3 cloves garlic, minced
- – 1/2 cup white wine (optional, can substitute with chicken broth)
- – 1 tablespoon fresh lemon juice (about 1/2 lemon)
- – 2 tablespoons unsalted butter
- – 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
- – 1 lemon, sliced
- – Fresh parsley, chopped (for garnish)
Instructions:
- **Preheat the Oven:** Preheat your oven to 375°F (190°C).
- **Prepare the Fillets:** Pat the sea bass fillets dry with paper towels. Season both sides with salt and pepper.
- **Sear the Fillets:**
- – Heat olive oil in an ovenproof skillet over medium-high heat.
- – Add the sea bass fillets, skin-side down, and sear for about 3-4 minutes until the skin is crispy. Flip the fillets and sear for an additional 2 minutes on the other side.
- **Add Flavorings:**
- – Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- – Pour in the white wine (or chicken broth) and lemon juice. Allow the liquid to reduce slightly, about 2 minutes.
- **Bake the Fillets:**
- – Add the butter and thyme to the skillet, stirring until the butter is melted and combined with the sauce.
- – Place lemon slices on top of the fillets.
- – Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- **Serve:**
- – Remove the skillet from the oven and garnish with fresh parsley.
- – Spoon some of the pan sauce over the fillets before serving.
