Crab and Avocado Salad

  • – 1 pound fresh crab meat, picked over for shells
  • – 2 ripe avocados, diced
  • – 1/2 cup cherry tomatoes, halved
  • – 1 small red onion, finely chopped
  • – 1/4 cup fresh cilantro, chopped
  • – 1/4 cup fresh lime juice (about 2 limes)
  • – 3 tablespoons olive oil
  • – Salt and pepper to taste
  • – Mixed greens or lettuce leaves (optional, for serving)

Instructions:

  1. **Prepare the Dressing**: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Set aside.
  2. **Combine Ingredients**: In a large bowl, gently combine the crab meat, diced avocados, cherry tomatoes, red onion, and cilantro.
  3. **Add Dressing**: Pour the dressing over the crab and avocado mixture. Toss gently to combine, making sure the ingredients are evenly coated.
  4. **Serve**: Serve the crab and avocado salad on a bed of mixed greens or lettuce leaves if desired. Alternatively, you can serve it as is in individual bowls.
  5. **Garnish**: Garnish with additional cilantro or a lime wedge if desired.
