Pan-Seared Halibut Fillets
Ingredients:
- – 4 halibut fillets (6-8 ounces each)
- – Salt and pepper, to taste
- – 1/2 cup all-purpose flour
- – 2 tablespoons olive oil
- – 2 tablespoons unsalted butter
- – 2 cloves garlic, minced
- – 1 lemon, sliced
- – Fresh parsley, chopped (for garnish)
- – Lemon wedges (for serving)
Instructions:
- **Prepare the Fillets:**
- – Pat the halibut fillets dry with paper towels. Season both sides with salt and pepper.
- – Dredge the fillets in flour, shaking off the excess.
- **Heat the Pan:** In a large skillet, heat olive oil over medium-high heat until shimmering.
- **Cook the Fillets:**
- – Add the fillets to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. The fish should flake easily with a fork.
- – Remove the fillets from the skillet and set them aside on a plate.
- **Make the Sauce:**
- – In the same skillet, add the butter and minced garlic. Cook for about 1 minute, or until the garlic is fragrant but not burned.
- – Add the lemon slices to the skillet and cook for an additional 1-2 minutes, until the lemon is slightly caramelized.
- **Serve:**
- – Spoon the garlic-lemon butter sauce over the halibut fillets.
- – Garnish with fresh parsley and serve with lemon wedges on the side.
