Grilled Swordfish Steaks with Mediterranean Salsa
Ingredients:
For the Swordfish:
– 4 swordfish steaks (about 6-8 ounces each)
– 3 tablespoons olive oil
– 2 tablespoons fresh lemon juice
– 2 garlic cloves, minced
– 1 teaspoon dried oregano
– Salt and pepper to taste
For the Mediterranean Salsa:
– 1 cup cherry tomatoes, halved
– 1/2 cup cucumber, diced

– 2 tablespoons fresh basil, chopped

– 1 tablespoon red wine vinegar

Instructions:
For the Swordfish:
- **Prepare the Marinade**: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- **Marinate the Swordfish**: Place the swordfish steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the steaks, making sure they are well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
