Grilled Swordfish Steaks with Mediterranean Salsa

Ingredients:

For the Swordfish:

– 4 swordfish steaks (about 6-8 ounces each)

– 3 tablespoons olive oil

– 2 tablespoons fresh lemon juice

– 2 garlic cloves, minced

– 1 teaspoon dried oregano

– Salt and pepper to taste

For the Mediterranean Salsa:

– 1 cup cherry tomatoes, halved

– 1/2 cup cucumber, diced

– 1/4 cup red onion, finely chopped

– 1/4 cup Kalamata olives, pitted and chopped

– 2 tablespoons capers, drained

– 2 tablespoons fresh parsley, chopped

– 2 tablespoons fresh basil, chopped

– 3 tablespoons olive oil

– 1 tablespoon red wine vinegar

– Salt and pepper to taste

Instructions:

For the Swordfish:

  1. **Prepare the Marinade**: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  2. **Marinate the Swordfish**: Place the swordfish steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the steaks, making sure they are well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. **Preheat the Grill**: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. **Grill the Swordfish**: Remove the swordfish steaks from the marinade and pat them dry with paper towels. Grill the steaks for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

For the Mediterranean Salsa:

  1. **Prepare the Salsa**: In a medium bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, capers, parsley, and basil.
  2. **Dress the Salsa**: In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the vegetable mixture and toss gently to combine.

Serve:

  1. **Plate the Swordfish**: Place the grilled swordfish steaks on serving plates.
  2. **Top with Salsa**: Spoon the Mediterranean salsa over the swordfish steaks.
  3. **Garnish and Enjoy**: Garnish with additional fresh herbs if desired and serve immediately.
